JWC Farm & Ranch, Wagyu, Whitesboro, TX, is a fifth-generation breeder in Grayson County and North Texas near Dallas. The operation has over 25 years of experience raising American and full-blood Wagyu cattle, holds membership in the American Wagyu Association, and conducts regular genetic screening and herd health checks.

Cattle graze on rotational pastures that support natural foraging across native grasses, promoting strong hoof development and balanced nutrition without routine antibiotics. From weaning onward, calves receive daily gentle handling in small family groups to build calm temperaments and confidence around farm routines.

Jimmy Eddy draws on his family’s ranching heritage dating to the 1930s, combining time-honored methods with modern welfare standards. Their breeding program includes ultrasound marbling evaluations and detailed record-keeping to guide selection for balanced growth and meat quality. Their cow-calf pairs and young bulls are raised on the ranch and benefit from veterinary oversight and mineral supplementation year-round.
