Shat Acres Highland Cattle, LLC has been raising registered highland cattle in Plainfield, Vermont since Ray Shatney's family first established the fold in 1967. Ray and Janet Steward operate two Vermont farms located about 35 miles apart, in Plainfield and Greensboro Bend, roughly an hour from Burlington in Vermont's central highlands.

The herd stands as the oldest registered and oldest closed fold of highland cattle in the United States, currently numbering around seventy-five animals. Breeding stock from Shat Acres carries more than half a century of continuous genetics, and the program sells registered highland cattle for sale in Vermont and ships breeding animals throughout the country each year.

Animals are raised with no hormones or antibiotics, grazing on pasture and haylage year-round. Janet has served as former Chair of the Beef Marketing Committee for the American Highland Cattle Association, bringing a research-grounded perspective to the program's grass-fed production model. The farm operates as a small, working family operation managed entirely by Ray and Janet, recognized by Vermont's Secretary of Agriculture for its innovation, sustainability, and multi-generational commitment to the breed.
