Four T Acres
Four T Acres raises registered Scottish Highland cattle in Burlington, Wisconsin, about 30 miles west of Lake Michigan and roughly an hour north of Chicago. Jean Gruenert and her family steward a multi-generational property that traces its roots to the late 1800s, when it operated as a hand-milking dairy farm.
The Highland program began in 2003, when the farm was reactivated and a small group of purebred Scots were introduced to the land. The herd has since grown to roughly 80 full-blood Scottish Highlands, and the farm competes at local, state, and national show levels — including hosting the 2011 NWSS grand champion bull in its sire lineup.
Husbandry at Four T Acres centers on a closed-chemical approach: no hormones or unnecessary chemicals are used, and the animals receive hay, oats, and corn grown directly on the farm's approximately 100 acres. Manure is composted and returned to the land, keeping the operation largely self-sustaining.
