Berge's Beef raises Scottish highland cattle in Colfax, Wisconsin, in the rolling Chippewa Valley region east of Eau Claire. Chad and Holly Berge took over the operation in 2014, carrying forward a herd that Chad's father originally built after transitioning out of dairying — making it a third-generation family farm.

The highland cattle graze across roughly 90 acres of pasture on the 160-acre farm Chad grew up on, located just north of Highway 40 between Colfax and Bloomer. Chad and Holly's approach centers on 100% grass-fed and grass-finished production, with the herd subsisting on open pasture in the warmer months and farm-harvested hay through winter. The farm has been featured on Wisconsin Public Television's "Around the Farm Table," a program spotlighting the state's agricultural community.
